There are not a lot of catchers who can be called on to play CF. College coaches will appreciate his versatility and will likely see this as a positive. They may look at him as a catcher who can fill in in the OF if needed, or they may see him as an OF (or P) who can also fill in as the emergency backup catcher. I think all coaches want that guy.

Son has been an OF forever.
Last seriously caught in 7th/8th grade. Did it for fun during some summer games in HS. Zoomed me from his D1 the other day showing me his new C gear. Starting OF, and 3rd string C.
