Here are a few solid catching coaches:

Tom Griffin - Carson-Newman
Mark Viramontes - San Diego
Joe Mercadante - U of Miami
Turtle Thomas - Head Coach Florida International
Scott Stricklin - Head Coach Kent State

Most of these guys are coaches I have seen at clinics. All were very solid speakers on the topic.
