Runner on 1st, batter gets a base hit, runner rounds 2nd and goes for 3rd, throw goes to 3rd and the batter goes to 2nd because of the play at 3rd. A person I know would score that as
the batter goes to 2nd on an error on the outfielder that threw to 3rd. How should it be scored.

By the way... I'm not a scorekeeper and sorry if this has already been discussed.

As described it should be a first and third, with a single to the batter advancing on FC.

Should the runner holds at first, the throw to third gets away and the runner moves up second, then you would score an error on whoever made the misplay allowing the advance.

You could score a double on the play described only if it would've been a double as hit and the OF threw to the wrong base / behind the runner going to third. If the batter simply runs hard out of the box, but the OF tries to get the advancing runner, then I'd say single all the way.
