Since you're in NJ the season doesn't start until March. If he just finished fall ball the end of October, let him have a little time away from the game. Then start working on physical improvement rolling onto mechanics improvement starting mid January.

While I'm giving this advice I know my son only got two weeks off from fall ball, one week from s****r and basketball started this week. The baseball team started physical training this week. He'll start swinging mid to late January and start throwing the beginning of February. Tryouts/practice doesn't start until March.

Here in Florida it is pretty much year round. Morning work outs have begun. Lifing one day, Core and plyometrics the next. They have Friday off. Mine hits and/or throws every day. Occasionally he will miss a day here or there but otherwise he is pretty consistant. He has a good friend that they will just go and hit or throw and/or lift with.

He is not used as a pitcher very often, I am sure that if you are a Pitcher you need down time for your arm to recover.
