Here are few that I have heard of,Poteet- Brice Cummings, JT Files, Bret Doe, Teddy Nowell. HP- Hainsfurther.Rockwall-Heath- Drew Benefield, Drew Baxter, Charlie Martin, Drew Verhagen. Forney- Zack Geer. Richardson Pearce- Some Lefty don't know his name. 
Jace Hudson pitches at Rockwall-Heath. Jr. RHP who throws pretty hard. Has had TJ, but is healed and ready to throw. There is also a LHP @ Forney, last name Thompson, who I hear is pretty salty.
The lefty at Pearce is Brett Powers, SHSU signee.
If you are talking varsity players to watch; Richardson Pearce-Zach Briggs, Forney-Taylor Thompson, Heath-Zach Frazier, Poteet-JT Files.
Yeah I hear that Frazier kid is a pretty good ball player
In my opinion Files is one of if not the best junior catcher in the metroplex
