Do you have to be officially done with your clearinghouse questions to take a official visit or do you just hae to be in the process of completing?

I'm not sure what you mean by "officially done" with the questions. You have to be registered with the clearinghouse, which means answered their questions and paid your fee. Once that is done, you may take official visits.
I am also confused by the question, unless it has changed alot over the last few years, it should not take that long to complete.
One thing you will have to do before the official visit is to give the school a copy (unofficial) of your transcripts.
