Is it considered rude to ask a college coach what his level of interest in me is? It would be helpful to know so I don't waste his time and mine with continued contacts if there is no interest.

No, not at all rude or inappropriate. Just be straightforward.
Do realize, however, if you are considering going to one of his camps, he will give a stock answer of "yes" to the question of if he is interested.
You will have to drill down a bit to get him to reveal anything of substance. Ask what skills he sees you have that most interest him. Ask about roster spots at your position. Ask when he saw you play and what he thought. Ask where you stand against others he is recruiting for the same position.
Those might smoke him out a little bit from his stock answer.
