I'm the sophomore shortstop on my highschool team and will most likely be varsity starter next year. On my summer team it looks like I am not gonna get that much time in the infield although we will be playing in many high exposure tourneys. If I get noticed as an outfielder on my summer team will scouts be deterred because I play short on my highschool team?

No. If they found that out and even cared that much, they would likely give you bonus points. Three fourths of Oregon State's lineup were former hs shortstops including their catcher and centerfielder. Let the scouts see your arm, glove, legs, and bat and they will find a place for you. Mickey Mantle was originally a shortstop and they found a home for him in the outfield.
Well of course I couldn't possibly resist talk of shortstops without poking my head in to take a peek!

Being a third year hs varsity ss, my son has played many positions during his Fall and summer tournament teams in addition to his favorite spot.
While he was resistant at first, I now think he realizes that he has gotten alot of first hand experience being a utility player and thus, perhaps has a broader knowledge of the game. I believe he feels this has been an advantage for him, although he too was worried in the beginning about not consistantly training in one position. So far, so good! ( all fingers crossed!)

The key of course, is to play any ( and all ) position (s) well and to be a good hitter!
I'm a strong believer that you have to have both.

Mantle made 51 errors as a SS first year in the minors. A no brainer to move him to the outfield with his speed and lack of SS ability.

Good example a player was playing SS in HS. Every other coach on the planet saw him as a outfielder. Played OUT in summer ball. Attend Team One Nationals and Area Games Trial, MLB tryouts as an OUT.

When MLB scouts saw him his senior year , everyone was he an OUT, not SS. He played OUT in college and Pro ball.
