Moose Wok Stir Fry

One large Chinese Wok skillet
2 cups small strips of Moose
2 tblsp. canola or olive oil
1 large clove garlic, crushed
1 cup chopped green peppers
2 cups sliced mushrooms
1 cup diced onion
1 cup cubed potatoes
1 cup corn kernels (frozen work well)
1/3 cup worchestershire sauce
1/3 cup red wine vinegar
salt & pepper
crushed oregano leaves



Heat oil in wok until very hot. Add crushed garlic clove and let sizzle a minute or so. Add Moose strips and saute for a few minutes. Add potatoes and onions next and saute for about 5 minutes, stirring every so often. Add worchestershire sauce and red wine vinegar. Add salt, pepper and oregano leaves as needed to taste. Lastly, add green peppers, mushrooms and corn kernels, and cook only long enough that vegetables don't go limp. Tastes great with a topping of freshly grated parmesan cheese

Mmmmm. Mint jelly with MOOSE. Made the mint jelly; now all I need is the MOOSE. Did you know that mint jelly is not really green? It isn't. It's golden colored in its natural state. That green stuff you see in the stores is just food coloring. Here's a straightforward recipe for making your own, using the pectin from fresh tart apples as a jelling base.

4 lbs of tart apples (e.g. Granny Smith), unpeeled, chopped into big pieces, including the cores
1 1/2 cups of fresh mint, chopped, lightly packed
2 cups water
2 cups white vinegar
3 1/2 cups sugar (7/8 cups for each cup of juice)

Combine apple pieces with water and mint in a large pan. Bring water to a boil then reduce heat and cook 20 minutes, until apples are soft.

Add vinegar, return to boil. Simmer covered, 5 more minutes.
