Have him work with a paddle, and use the smallest glove that he feels comfortable with, if he can field with the 10.75, then by all means use it. The smaller the glove, the better fielder he will become, it forces him to get his rear down, which will create good muscle memory, as he gets older he will find that he probably likes the 11.5" the most, gives him more margin for mistakes.
I played 2b in college with an 11.5" Play with whatever you are comfortable with. If you can turn 2 quickly, no one will care.
I also played with 11.5 Rawling HOH through college. I literally tried them all, the web you choose is important to as middle infielder.. Bottom line.. Whatever leather helps you to never let anything through and turn the deuce.. Not all.. but I've seen guys who swear by little 10.5 and they booted a lot.. it was if they thought they were "supposed" to use a tiny glove and it hurt them. I usually saw 11.25 or 11.5 no bigger.
