I guess most good baseball coaches know fielding. One guy my son when to was a middle infielder and had better knowledge of fielding drills than some of the others.
My son has worked with a couple of coaches which are considered some of the best, one is a retired PAC 10 coach and another was a very successful retired high school coach.
They worked on the finer points of angles, effective transfer of the ball, reading the hitter, reading the ball, etc. and a lot of drills.
There is a guy Nate Trosky here in Central California that I would call a fielding coach. He can teach other aspects of the game but what he is best known for is teaching infield play ... and boy does he have a lot of different drills to bring out the finer points of defense.
