Truthfully, I'd ask the coaches that are recruiting you that question. I'd also ask where you "sit" with regards to the other recruits....that is a very fair question, and frankly something you need to know. The difference between interest and sincere interest is huge.
Their recruiting timetable can vary by school depending on their needs, your baseball talent, and your SAT/ACT situation. There are some recruits that re-take the SAT/ACT to bring their scores up to a specific requirement which varies by school. Early Decision/Early Action is typically Nov 1. So if an Ivy coach is going to support you, you should know a few weeks before Nov 1 at the very latest. You may want to check on the dates and admission type for your specific situation.
An Ivy recruiting class can vary from 5-10 recruits from thousands of potential recruits looked at nationally. Over the years, I've noticed a trend in Ivy recruiting that happens in 3 waves. It should be no surprise because it is almost entirely based on skills, ability, and need. There is an initial group of a few players that could go just about anywhere. They have offers from other mid to high D1s. The Ivy coaches try to get them committed as soon as possible. Then they work on the bulk of the recruiting class at summer showcases and camps. These will be guys recruited to other Ivys, D1 mid majors, Patriot or top D3 schools. The last group is the johnny come latelys who could be studs who changed their minds (before Nov 1 ED), add something to the team, got a late start on recruiting, or had to bring their SAT or ACT scores up to be considered. A recruit wants the coaches support through Admission because the admissions rate for RD (regular decision) is significantly lower due to an extremely competitive applicant pool.
Showcases and camps have a few weeks to go, so I think we are still in the first phase but will be headed to the second phase in a few weeks to a month.

OVs typically happen when school is in session. 1st phase kids will probably want to visit (un-OV, camp, showcase) before they make a decision to compare against top tier D1 schools who are recruiting much earlier and pressuring them for a decision. In some cases, an Ivy recruit will have foregone earlier offers from other D1s to pursue an Ivy. I would suspect a coach would offer an OV if requested, but I think you'll find many Ivy recruits will have verbally committed before the OV season.
All schools that offered son gave us a few days or a long weekend to think about it Ivys were no exception. Your mileage may vary depending if you have all information into Admissions and Financial Aid.
