Wow.

Is it that important to win a high school baseball game that a coach needs to keep a pitcher in for 10 or 11 innings?

Granted we don't know the # of pitches, but there is a rule on innings. I'm a little surprised if a long time coach does not know the pitching rules. The Alvirne coach knew right away 2 years ago when my son's team tried to bring in a pitcher that did not have 3 days off after pitching more than 5 innings in a game.

NHIAA indicates:

B. A pitcher shall throw no more than fifteen (15) innings in a seven (7) day period with no more than nine (9) innings in a day.

D. Any team in violation of rules A, B, and C above shall forfeit games in which a violation occurs.

So, it seems it should be a loss for both teams since they both violated the rule.
