We are in the same type of situation. Here is the following.

Monday: Stretch & Yeager Throwing Program
Tuesday: Hitting Stations/Outfield Drills
Wednesday: Stretch & Yeager Throwing Program
Thursday: Hitting Stations/Infield Drills\
Friday: 3 ball scrimmage

Infield/Outfield we do mostly footwork drills and recognition drills. We do not do a lot of throwing. 3 ball scrimmage. Coach pitches and the hitter gets 3 pitches. We play on Saturday's so we use those as "Bull Pens". If you are not in that situation then you might want the pitchers to throw on Friday's and just work Fastballs. We run the format in this. Always start with a runner on 1st and we play 6 outs straight so we do not waste to much time running on and off the field.
We have 55 minutes a day....here’s what we've done so far.

Monday-Lift, Agilities (bleachers, ropes, cone drills, etc.)

Tuesday-Long Toss and Distance Running/Sprints

Wednesday-Lift and Agilities

Thursday- Long Toss and Distance Running/Sprints

Friday- We usually do activities that require a lot of running like Ultimate Frisbee or playing a game we call Cajun rugby, which is like football except you can pass forward or backwards at any time. This gets the kids a lot of running and agility type movements and changes it up a little bit.
We are lifting 2-3 days a week Mon/Wed (weather factors in for friday) and tuesday/thursday we are outside. We run hitting stations, 1st & 3rd offense and defense, baserunning, small ball execution, defensive drill series, etc when outside. Our thought is to make sure everyone is busy, and incorporate what we can. Also, our kids practice twice a week in Fall Ball (and my fall coaches try to implement what we are doing. they are a person with no connection to the program that is the HC of the Fall/summer and a few supportive dads),and if we hit tuesday, they do defense that night. They have played a fall season and are trying to play up to Christmas break if possible.
