My son is a center fielder for his summer select team and short for school team and relief pitcher for both. Going to Showcase with PG and signed up as OF - we believe this to be his strongest position when the competition is higher. Can / Should he do the IF drills at PG - the fielding eval (not in the games)?

I think he should take infield, too. He'll get an IF video, and an IF velocity number. There should be enough time to do both, and it just gives him another shot to impress someone. What is your concern?
