I think it is always appropriate to call him "coach." I agree with TR, morning is best time.

PS Be prepared to talk about yourself. This is difficult for some because many players know that it is all about performance on the field, but always view it from the coach's perspective. He needs to get some info, and not just baseball. Why you are (seriously) interested in his school or his program, and your academics.
Here are some questions, for Div I (I think they are different for Div III to some extent).
1. May I send you tape?
2. May I send you my bio?
3. Where are you going to be this summer/fall if I want to be seen by your staff, or my team will be playing in your area on ....
I am on a roll know. Keep it short, they are busy, and please thank the coach for taking the time to speak with you. (Believe it or not, generally these gentlemen are normal people, and for the most part, good guys who have the difficult task of selling their programs to some (a few), and providing heartbreaking news to others (most).
