If you're not that concerned with the recruiting, and just want to get some off season instruction, then your best bet is to find someone local and invest the money in individual instruction.

I second all of what Gman13'sdad said.
In addition, if you have the money to spend and you feel your son is up to the challenge and you want him to attend some of the larger camps to gain a broader range of exposure, I would recommend the big North Carolina Showcase that is put on by Impact during the summer each year and/or Perfect Games Atlantic Coast Top Prospect Showcase. Both of these draw the recruiters and scouts very well.
Also, maybe the best Fall/Winter college camp for exposure in NC is Elon University's all-skills camp in November. In the past it has been worked by a large number of college coaches and some pro scouts.
