What’s funny is, not only do 1Bs get credit for simply catching a ball, but the fielder making the throw gets penalized if the throw touches the ground and the 1B doesn’t make the play.

If a throw is low, wide or high, or strikes the ground, and a runner reaches base who otherwise would have been put out by such throw, the official scorer shall charge the player making the throw with an error.
NDD - There are lots of things in scoring that don't seem right.

Why does a fly ball to the OF that scores a run count as a SF, RBI and no AB, but a ground ball to the INF that scores a run count as an AB?

There are countless other examples, but it's just the way baseball is scored.

Bottom line, every out requires a putout by somebody. It's the guy who made the out. The pitcher might get credit for the "K" but the catcher gets credit for the putout. Firstbasemen get credit for putouts at first.

On a 6-4-3 DP, The 2B receives credit for both a putout and assist. We don't make the rules, we're just scribes...
