That is a fielder's choice because he got the force out at second; it doesn't matter if he could have gotten the guy at first or not.

Fielders choice...I don't think it can be a hit if it resulted in an out.

Fielders choice--remember it is scored a fielder's choice even on an apparent hit to the outfield where the runner on first is forced at second after holding up for some reason. So if the runner is out at second coming in from first, then its just tough luck for the hitter as far as getting a hit.

It will even itself out over the course of a season.

What about the 'hit-and-run' where the 2B breaks to cover the bag and the batter hits a ground ball right where 2B was standing....a possible DP becomes a hit...

And you can't complain about defensive positioning taking away a hit (e.g. the CF playing shallow). Every defensive move takes something away but also opens something up...
