Is it the correct mechanic for the umpire to point with his right hand or left hand when calling interference? Same question when calling obstruction?

Yes to both.
The difference obs pick one hand, those that have too, use the right hand and leave there for a bit.
Int. use both, and point em straight up while calling time.

But, what if the int is not an immediate dead ball?
Otherwise, I personally don't think it matters. Some will say to use the left because the right is used for outs. Others will say for PU to use the right since the mask is in the left.
