1 out. Man on 3rd. Line drive out to SS. Defence thinks its out 3 and starts to run of the field. R3 starts to run to the dugout but coach catches him and pushes him back to 3rd, Is R3 out?

Didnt affect game but just curious. I dont think the Umps saw what the coach did.

Yes it is an out. The call is coaches interferance. Also saw it happen this way. Son at bat with bases loaded and two outs. As the pitcher is on the mound taking the sign from the catcher the third base coach reaches over to the runner standing on third base a puts both hands on his shoulders as he is giving instrucion. The umpire call coaches interfernace and that was the third out. Coaches can not touch a player on the field.

In your scenario the coach physically assisted the runner by pushing him back toward 3B therefore the runner should be called out. However, you also stated that you don't think the umps saw it happen. If they don't see it they can't make the out call.

To say that a coach can't touch a player on the field is not true.
If a coach pushes the runner back toward a bag or pushes him forward or picks him up off of the ground it is a violation if the ball is live. A violation cannot occur if the ball is dead.
In your scenario the coach was simply giving instructions to the runner. Although the ball was live, unless the ump determined that the coach had his hands on the runner to hold him on the bag, the coach wasn't guilty of physically assisting the runner. What he was guilty of was not paying attention to the game if the pitcher was ready to pitch; but there's no rule book penalty for that.
Many people misinterpret this rule. For example: A batter hits the ball over the fence for a home run. As he rounds third base he trips over the bag and falls. The coach helps him to his feet and he continues to the plate. This is not interference. When the ball passed over the fence it became a dead ball therefore the coach isn't guilty of assisting the runner.

what you describe is NOT interference and the upire was incorrect to call it such.
