The weight that you use will always be indivdual and will change for a variety of factors as you get stronger.

Squats (all variation), done properly, are the best lower body exercises you can do.
EDIT: My other answers are in your quote box above. And remember never sacrifice lifting technique in order to lift more weight. That's counterproductive and may lead to injury.
