Caramal Apple Bars



Prep time: 30 min
Cook Time: 45 min
Yield: 4 dozen bars

CRUST
3/4 cup All-Vegetable Shortening
OR 3/4 stick All-Vegetable Shortening Sticks, plus additional for greasing pan
1 cup firmly packed light brown sugar
1 large egg
1 1/2 cups All Purpose Flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 3/4 cups quick oats, uncooked

FILLING
3 to 4 (about 4 cups) Granny Smith or Golden Delicious apples, peeled and chopped into 1/2-inch pieces
2 tablespoons All Purpose Flour
1 teaspoon lemon juice
1 (14 oz.) bag caramel candies, unwrapped

Preparation Directions:
1. HEAT oven to 350ºF. Grease a 13 x 9 x 2-inch baking pan with shortening.
2. COMBINE 3/4 cup shortening and brown sugar in large bowl. Beat at medium speed with electric mixer; add egg. Beat until well blended.
3. MIX together 1 1/2 cups flour, salt and baking soda. Add gradually to creamed mixture. Add in oats. Mix until blended. Reserve 1 1/4 cups of mixture for topping. Press remaining mixture into prepared pan. Bake 10 minutes.
4. TOSS apples with 2 tablespoons flour and lemon juice. Distribute apple mixture evenly over partially baked crust. Press in lightly.
5. PLACE caramels in microwave-safe bowl. Microwave on HIGH (100% power) 1 minute. Stir. Repeat until caramels are melted. Drizzle melted caramel evenly over apples. Crumble reserved topping evenly over caramel.
6. BAKE 30 to 40 minutes, or until apples are tender and top is golden brown (do not overbake). Loosen caramel from sides of pan with knife. Cool completely. Cut into 1 1/2 inch bars. Cover tightly with plastic wrap to store.

Pumpkin Pie Pancakes



Prep time: 10 min
Cook Time: 3 min
Yield: 16 pancakes

Ingredients:
1 cup All Purpose Flour
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon pumpkin pie spice
1/2 teaspoon salt
2 tablespoons sugar
1 cup buttermilk
1/2 cup canned pumpkin
2 large eggs
1/4 cup Pure Canola Oil
1 teaspoon vanilla extract
No-Stick Cooking Spray
Regular Syrup

Preparation Directions:
1. WHISK flour, baking powder, baking soda, pumpkin pie spice, salt and sugar in a large bowl. Whisk in buttermilk, pumpkin, eggs, oil and vanilla until well blended.
2. SPRAY a large nonstick griddle or skillet with no-stick cooking spray. Heat over medium heat.
3. POUR batter by scant 1/3 cupfuls into skillet, working in batches. Cook until bubbles form on surface of pancakes and bottoms are lightly browned, about 1 1/2 minutes per side. Repeat with remaining batter, spraying skillet with no-stick cooking spray between batches as needed.
4. SERVE warm with syrup.

Crockpot Mulled Cider


This crockpot mulled cider recipe is spiced with ginger, cinnamon, and cloves.
Ingredients:
2 qts. apple cider
1/4 cup packed brown sugar
1/8 tsp. ground ginger
1 orange (unpeeled)
2 cinnamon sticks
1 tsp. whole cloves
brandy ( optional )

Preparation:
Combine cider, sugar, ginger and orange in slow cooker. Add cinnamon and cloves to crockpot. Cover and cook on LOW 2 to 4 hours. The entire house will smell great! Strain out spices.

Pour steaming hot into your favorite fall mug!
( adults add a shot of brandy to keep the tummy warm )

You are more than welcome BBfam. Wish I could take credit for creating them too,...but I just cut and pasted them from the web. Some of the gals from work had recommended these and I thought they were pretty nummy!
Seems like here in the midwest we always get a jumpstart on Fall,..and I wanted to spread a little of that with you all.

" Homegrown apples "??? WOW!!! I love to pick my own apples and then go bake. ( now if I could only get them to peel themselves- ha! )
