I'd like to hear some more elaboration on what constitutes plyometric shoulder exercise.

A link to the study would suffice/be preferred as well, seems intriguing.
Most of these are the typical rotator cuff strengthening and maintenance exercises. Forgive me for not knowing how to attach the PDF file but google this and it should pop up. I will have to dig around some of my stuff to find another nice research article I came across.

Jpontiac: One of the leaders in the area of throwing specific cross training is Ron Wolforth. You can google him and see some his stuff. He makes his living on selling his programs so for details you would need to purchase one of them or go to one of his camps. His most visible client is Trevor Bauer, who trains there in the off-season. I know my son’s college program uses some of his techniques, but he has not started in the throwing portion of his training so I am not sure exactly what they will be doing. Good programs are periodicized so there is a strength phase, a power phase, a speed phase and a rest phase. I am not sure how this is all put together in relation to throwing, but I should know more in a month or two once he gets started.

For Kevin the original OP a couple of books that are really a bargain to get you started would be two ASMI periodicals 1) Conditioning Program for Baseball Pitchers. 2) Preventive and Rehabilitative Exercises for the Shoulder and Elbow. I think you can get both for $25. Must have books for any pitcher or catcher IMO. Go to their site and order them online. It has a section on the plyomerics that is pretty good and a great place to start at least.

Good Luck!
