Yah, I love to put some turkey, c. sauce and and some cream cheese on there. Makes a great sandwich. Love that. Also cannot wait for the sweet potatoes. And some times we have salmon quesadillas as an appetizer. Good stuff there!

Thought I would share another dessert. This is something that I fix every Christmas, but may pop out one for Thanksgiving this year.

Butterscotch Pie (best if prepared in an iron skillet if you have one)

3 egg yolks
1 cup brown sugar
6 tablespoons of flour
2 cups milk (skim or anykind)
1/4 teaspoon salt
3 tablespoons butter or margerine
1 teaspooon vanilla

Beat yolks, beat in sugar, flour, 1/2 cup of the milk, and salt in a bowl. Heat remaining milk in skillet, add butter. Stir in mixture from bowl slowly and cook until thick. Then add vanilla. Pour into your crust, top with meringue - great pie!

My recipe while not traditional Thanksgiving fare...has become somewhat of a tradition at Thanksgiving dinner at my In-Laws. Due to my Father-in-laws strict diet, they eat turkey all year round so my Mother-in-law always requests that I bring my salad for her.

Chinese Chicken Salad

Salad:

3 boneless chicken breasts - shredded
1 head of lettuce - shredded
2 stalks of green onions - sliced
5 - 6 sweet pickled scallions - chopped
2 tablespoons of toasted sesame seeds
2 tablespoons of taosted slivered almonds

Dressing:

One teaspoon salt
1/2 teaspoon pepper
3 tablespoons Red Wine Vinegar with Garlic
4 tablespoons sugar
1/4 cup salad oil

P.S. I went grocery shopping tonight and chuckled when I saw the shelves filled with Ocean Spray Cranberry sauce. Made me think of all of you in the LL.
DB2B, thanks for that recipe.....my niece, who will not eat red meat is joining us for the Christmas holidays...(I'm going to brag on her....she has 2 more years to go at UCLA for her PhD in Neurological Research...and she was a great softball player!).....I've been trying to think of special dishes.....and you have just solved the Christmas Eve menu!

Bullwinkle....I love lamb....but my honey doesn't.....so.....after many years of married life, minus lamb......I've forgotten all the fancy recipes.....but do remember....on the spit....with a garlic, pepper and salt rub....sooooo good! You got me thinking though....maybe this Christmas.....I'll have the turkey in the oven, and a couple of lamb chops on the grill.....
Nothing like standing on the deck on a cold winters night while the snow is whipping at your face...cooking shishkibob...married a Greek 31 years ago and have come to appreciate that style of cooking(Irishman here...you know the type..the meat doesn't touch the potato or the veggies) and since I married Chef Boardee here is the recipe for his mouth watering shishkibob:

take chops or a leg of lamb(cut into cubes)...marinate in olive oil(pure virgin type), add in oregeno, salt, a little garlic powder, slice a green pepper and onion and lemon juice(it kills the gamey taste)...mix and let sit...the longer the better...makes an awesome dinner....add in greek salad which is sliced tomatoes, green pepper, red onions, feta cheese, calamata olives and mix in olive oil, balsamic vinegar and oregano..add a little fresh bread and voila you have a greek dinner....enjoy!!!!!
you can also use pork or chicken breast marinated in the same fashion makes the taste perfection...
Greek Easter a leg of lamb is marinated all day over a spit...constantly rubbing on the oil, oregano, salt, and lemon juice mix
WOW Bullwinkle....we always have beef tenderloin for our Christmas meal...but that "salsa" recipe sounds WONDERFUL. I am going to have to find something to serve it with over the holidays. Not a big "lamb" aficiondo myself....but I'll bet that salsa would taste good with grilled chicken. Thanks again for another great recipe. My compliments to the chef with antlers! Smile

Bullwinkle, in the next couple weeks, I'm doing a wild game dinner for some special friends and I'm going to try your salsa recipe with one of the dishes. Out of respect for your genus, I'll serve it with ELK chops. Besides not serving any moose, there won't be any anteater on the menu, either. Gotta have respect for the mooseman! Wink

I'll let you know how it turns out, but it should be quite excellent.

BTW, you guys picked up a heck of a fine pitcher when Cory Hamilton committed for play for UCI next year. Congratulations.
