Those babies are dry as a bone. No good.

Very simple:

Get some heavy cream - some grated parmesan reggiano - a pinch of basil - heavy dose of garlic powder - finley minced mushroom - and salt and pepper to taste. Warm this beautiful bath of a concoction up.

Use scallops - no bigger than a golf ball. Wrap the bacon - and cook at medium heat. You can precook the bacon a little before you wrap them on the scallops. You want to make sure the bacon is crispy as a critter when it is done.

Then you - very gently - lay the bacon wrapped scallops in the garlic/cream sauce.

Then you eat them like a rabid animal.

Mangia!!!

Keep a close watch on that mailbox of your's skipper. I just checked mine to see if its' little bacon bedecked scallop had arrived and I saw this guy running away...



He had a length of bacon stuck in that gap in his teeth...little twerp...he snarfed my scallop!

Doc - here is the way I see it - it is becoming sort of an off-season ritual.
