For years we did the bacon in the microwave. Pretty darn good, but now I fry it real slow in the cast iron skillet and it is extra good.  All bacon is not created equal.  Oscar Meyer is a super star when it comes to bacon.  However, I'm partial to apple wood smoked these days.  Really needs to be just right... under cooked is terrible... over cooked is hard on the roof of your mouth, it's like chewing shrapnel.  But just as soon as that fat changes to crispy bacon you have the world's greatest food.  Great sausage might be second best, but just like bacon, there is a big difference from one sausage to the next.

BTW, this is not the first time that a nice topic was destroyed by the mention of food. After all, what would we all choose if we could only have one... Baseball or Food?

Food for me. Love great food from fresh ingredients.

Bacon is an all-time great food. It's versatile. You can eat it for breakfast as a side, put it on a salad, add it to sandwiches and burgers, you can include it in sauces and you can wrap stuff in it like scallops, filets, or jalapeños. You can even eat maple bacon on a chocolate donut.

I'll take a package of Wright's Hickory smoked, thick sliced bacon every time but I wouldn't turn down Apple smoked, maple flavored or just good old plain bacon either.

Skillet version is awesome but my wife had perfected cooking it in the convection oven before I went on bacon restriction.

Speaking of the world's second best food, has anyone tried the Conecuh brand of sausage? Delicious on its own but especially good when wrapped in, you guessed it, bacon!
