My son's college team's unofficial but widely used mascot in Cleveland, Mississippi is the "Fighting Okra" of Delta State.

Stanford's "unofficial" mascot is the Stanford Tree, to go a long with there non-marching marching band. Both lead the conference if not the country in suspensions.

Scottsdale Community College has the very intimidating Artichoke as its mascot...

His cute little name is Artie...

I have always found the Horned Frog to be a strange choice (TCU). And I'm a native of Fort Worth.

As a youngster in the 1960's my brother and I would catch literally dozens of what we called hor*ey toads", although I think the proper name was horned lizards, everytime we went to visit my uncle in Kenedy TX, SE of San Antonio. I understand these creatures are very rare now and protected due to pesticides and fire ants. I think this is where they got the Horned Frogs for the mascot.

The horn*y toad was immortalized in the movie Old Yeller.

ThreeBagger, I have the same memories of catching the toads in our yard and calling them the same name (didn't think about it) - also in the 60s. That was back in the days when kids made their own fun.
